When I met Kimmy (aka "Kimberly") in the Kroger parking lot in The Woodlands, I thought I was simply picking up a couple of loaves of sourdough bread to sample.
Instead, I got a taste of the story behind the bread, and it genuinely brought me to tears.
Before I even opened the bags, I could smell the loaves. The rich, warm aroma filled my car almost immediately. On the drive home, it felt like aromatherapy, and by the time I pulled into my garage, I was already looking forward to my first slice, which turned out to be perfectly delicious. In fact, I’m embarrassed to admit that both loaves were gone in less than 48 hours (I have a family of six, so show me some grace!).
But what really stayed with me wasn't the bread. It was Kimmy's story.
I'm always curious about how local businesses come to be, and Kimmy graciously shared hers. During a season of profound grief, after losing her father, two sisters, and her son, she prayed for something that would bring joy back into her life.
The answer came in an unexpected form: sourdough.
What started as a therapeutic outlet became a source of healing. As Kimmy baked for family and friends, her passion grew, and eventually so did the demand for her bread. Today, that journey has become Simply Doughlightful Sourdough Co. TX, a cottage bakery based in Conroe specializing in small-batch sourdough breads and treats.
As Kimmy shared her story, I found myself blinking back tears. There was something beautiful about hearing how God transformed a season of loss into something that now brings joy to so many people.
And speaking of joy... let's talk about the bread.
The loaves are absolutely beautiful. They’re golden brown with artisan scoring and a perfect crust. The outside has that satisfying sourdough crunch, while the inside is soft, tender, and full of flavor. I tried the original sourdough loaf and a roasted garlic & rosemary loaf, and both were scrumptious.
I asked Kimmy her favorite way to enjoy her bread, and her answer was simple: she prefers her plain (original) sourdough with Land O Lakes Honey Butter.
Friends, I was planning to run to the store to grab some honey butter, but wouldn't you know those bread loaves were gone before I had the chance? So I enjoyed mine with the olive oil I had on hand. The slightly tangy bread paired with rich, extra-virgin olive oil is hard to beat. Of course, the bread is delicious all on its own, too, which is how my other family members ate it.

What I appreciate most about Kimmy is that her business is still rooted in service. She regularly donates bread and baked goods to local charities, businesses, and community events because giving back remains important to her.
Now, she is taking a leap of faith and transitioning into baking full-time. That's exciting, but it's also a little scary, as anyone who has ever owned a small business can relate.
After meeting Kimmy and tasting her bread, I'm hopeful our community will support her, because sometimes when you buy from a local business, you're getting much more than a product. You're supporting a story of resilience, healing, faith, and second chances.
And in this case, that story comes wrapped in a truly delicious loaf of sourdough.
